Tomato, Cucumber, and Onion Salad (Cachumber).
Cachumber aka Kachumber is one of the most popular chopped salad served with Indian meals. It is fat-free and full of flavor. It takes a little time to chop all the vegetables but well worth the effort.
2 cups tomatoes, finely chopped
1 cup cucumber, finely chopped
1/2 cup onion, finely chopped
1/4 cup chopped cilantro
1/2 teaspoon salt
1 tablespoon fresh lemon juice
1/2 teaspoon roasted cumin seed powder
In a serving bowl, mix tomatoes, cucumbers, onions, coriander, salt, and lemon juice. Toss gently. sprinkle with cumin seed powder.
Serve immediately or cover and refrigerate until ready to serve.
Makes 6 servings (3 cups)
