We have been told, over and over, that we should eat at least three servings of vegetables per day. Since servings can be confusing, the USDA (United States Department of Agriculture) has changed the recommendations to 2 to 3 cups of vegetables per day. I like that.
But the bottom line is, per CDC (Center for Disease Control), only 1 in 10 adults get enough vegetables.
Why is it so hard to eat our vegetables? In my opinion, there are two main reasons people don't eat enough vegetables; it takes too long to prepare them, or they don't taste good. What is your reason?
