two friendsI’m so happy as I finally recorded some cooking videos last year. I’ve been wanting to do some TV or videos for years. About 10 years ago, I did two videos. I convinced my son Nitin’s friend Tushar Dayal, who was in journalism school at Iowa State University to record some videos for me. I’ve known Tushar for years. He did an amazing job and we uploaded the videos on YouTube.

The Chicken Curry video was a huge hit, it has over 378,000 views. Well, videos cost money and time and I was unable to record more. Things happened and I went back to a full-time job and life went in another direction.

 

New Venture: It was TimeFriends

Last year, Nitin’s friend, Teresa Krug, a TV producer was at our house and we started talking. Long story short, she offered to record a few videos for me. It was a new venture for both of us. She recorded and edited seven videos.

We both learned a lot, we ate a lot, and had fun.

YouTube Channel

We created a new YouTube channel, Madhu Gadia Cuisine of India. We are introducing one video at a time, about two videos per month

My goal in cooking is to keep it simple, quick and authentic. Indian food is all about flavor and taste. Indians in general eat a lot of eggplant and make them in variety of ways. This is one of my go-to eggplant dish. I can make it in less than 30 minutes, and its nutritious and delicious.

Nutrition Benefits/Tip:

Eggplant is rich in antioxidants, fiber, vitamins and minerals. It is low in calories and carbohydrate.
